    Our beautiful restaurant has passed through the traumas of birth with flying colours. There are many things to be proud of but the people who make up the team are the ingredients that make the difference. Our team is solid and with a degree of professionalism that one encounters only in the best of restaurants internationally.

    It makes sense that his new restaurant makes an offer that a big slice of the dining community won't be able to refuse...Come to Bilson's for considered food made by a chef with nothing to prove, in a restaurant where you can hear yourself think. There's nothing else quite like it Sydney."

      dined there in early 09, obviously great food, however the experience overall was not as good as other top class restaurants we've eaten at. I'd choose to eat elsewhere for a special night out in future   (mcgregor family - See my reviews (6) - July, 2009)

      By far one of the best. The 9 degustation menu was lovely and the Australian/International Wines suited every course perfectly. The staff were very professional and the Restaurant Manager and Sommelier Andrew Cullen was extremely helpful and knowledgeable.

      We did the Australian/ International Wine matching (@ around $95) with the degustation (not the French Wine matching which was around $135?) which was sensational.

      If you want to spend a nice moment with someone special this is definitely a good address to go to. Services was very friendly and efficient. We received many additional information about the food but in particular about the wine. Food was really good maybe a few too many fish dishes in the entry courses, where it would have been nice to have more variety. Main courses offered really something for everyones taste. Quality and combination of dishes were really good. Atmosphere was nice but could be improved. Overall an expensive but pleasant experience out.   (Seb - See my reviews (2) - December, 2008)

      I recently had by far the best meal I had had in years at Bilson's. The service, the taste and presentation of the food, the ambiance; everything was as close to perfect as is possible in a dining experience. The service was efficient, professional and warm and the food so beautifully presented, it was almost a shame to eat it (except that it tasted even better than it looked). The standard was so high that I realised how underwhelmed I had been with Sydney restaurants until then. Bilson's is in a class of its own.   (Lurdes - See my reviews (2) - October, 2008)
