Like much of the traditional fare of Australia, we can thank the British for fish and chips. This dish of battered fish and deep-fried chips has a recorded history of nearly 200 years in London, and has a record nearly as long here. The fish of choice in the UK are cod and haddock from the waters of the north Atlantic and North Sea. Australian fish and chips use local varieties of white fish like reef cod and rock cod, flakes, or barramundi from the ocean, but Australia has started to import more distant varieties from South African waters and freshwater fish from Southeast Asia (including farmed basa in very high volume).

Australian freshwater fish offerings are extremely varied and subject to seasonal availability. Subtleties exist in fish selection, but there's also the flavour of the batter and fryer. The simplest batter is a water-flour mixture with bicarb added for fluffy lightness, but beer or milk can be added to deepen the flavour and colour. Peanut or vegetable oil is used most frequently, but lard gives fish and chips a classic taste. These days fish and chips is a popular choice for takeaway. The same restaurants that serve fish and chips are often the ones serving burgers, hot dogs, and kebabs as well. Fish and chips can also be found in fine dining alongside crab cakes and other more exotic offerings. Here fish is framed with salad and a wedge of citrus and tartar sauce with capers is the condiment of choice, but mayonnaise from a packet or tomato sauce isn't out of the question. Though it can be found in forms just as varied as the Australian populace, fish and chips at its base remains one of Australia's most iconic dishes.
