    Picturesque Darley’s Restaurant located within this heritage listed building, boasts richly appointed fittings, stained glass windows, open fireplaces and magnificent views of both the surrounding gardens and the Jamison Valley.

    Dine indoors or on Darley’s balcony which can be enclosed for extended outdoor dining during the cooler months. Also available are separate private dining rooms all beautifully decorated for those special occasion events.

    The menu features finely crafted Modern Australian Cuisine which perfectly fuses taste, texture and flavour. The focus is on slow cooked dishes, using the best local produce and cleansing organic foods in keeping with the resort’s spa philosophy.

      It's a beautiful setting but I think the food was a bit average for the price. My entree was basically a sausage. My partner's entree was much better but I'm not sure it deserves the rating of Best Regional Restaurant.   (See my reviews (9) - February, 2008)

    Carl Middleton - Carl joins Lilianfels from his previous post at Quay Restaurant and most recent position as Executive Chef at the Four Seasons in Sydney. In this role, Carl oversaw the overall hotel dining as well as the hotel's signature restaurant, Kable’s. Prior to his Executive Chef position in Sydney, Carl held a variety of culinary roles around the globe including eight years spent cooking at the Langham Hilton and London Hilton on Park Lane, alongside his mentor and key influencer, Anthony Marshall. It was here that Carl honed his culinary skills and truly developed his own cooking style, which he believes, simply celebrates good quality produce.
