Our cuisine is built on the basis of French techniques, using excellent Australian produce sourced locally where we can. We let the seasons express themselves.

We undertook a promise to each other that the search for quality ingredients will require an attentive selection from the farms, the bush, the sea, the rivers, the wild and the items that have been growing in our region. Through the preparation of our cooking we aim to deliver our customers the very best quality we can. We take great pleasure in producing particular foods ourselves.

We want to promote a cuisine that is healthy and create food that is easily digested; we want to include floral, earthy and fresh expressions including herbs, flowers, grain, cereals and all kinds of beans – as a fine dining experience. Vegetables are a big role in Embrasse’s kitchen and will be filling more room on the plate than is generally the case in gourmet restaurants.
