The food created by head chef Peter Gilmore is equally awe-inspiring; innovative cuisine that celebrates the diversity of nature, and takes the diner on a journey of discovery. Quay has become one of the most awarded restaurants in Australia, one of only two restaurants in the country to have received the coveted “three-hat” rating for eight years in a row.
