Brian Powles - Loves using fresh local produce to create simple, tasty meals. Also is a dough enthusiast and makes all the restaurants breads, pizza dough and sweets daily. Has a keen interest in boutique wines and chooses the restaurant wine list to compliment his food.
Lindsay Mulroy - 4th year apprentice, studied under Brian for the whole of his apprentiship. Very passionate about all food.
