Sydney diners now have a classic city restaurant and wine bar with the opening of Sepia in the CBD on 1 May 2009. Sepia is the creative collaboration between two of Sydney's highly regarded food identities – the renowned seafood wholesaler George Costi of De Costi Seafoods and British born Sydney Chef Martin Benn.

Martin Benn - * With a plethora of pan-global experience Chef Martin Benn has held formidable positions in many of the world’s best restaurants. Starting his career in London, Martin has spent time at Le Meriden Hotel, The Oak Room and The Landmark as well as working for legendary Chef Marco Pierre White at The Criterion Restaurant. * In 1999, Benn joined the world famous Tetsuya’s Restaurant working directly under the legendary Chef Tetsuya Wakuda. During his time there, Benn grew with the accolades and acclaim given to the restaurant, earning Tetsuya’s Restaurant the highest critical rating in Australia. * In August 2004, Benn moved to the iconic Sydney restaurant – the Boathouse on Blackwattle Bay as Executive Chef. Here, he devised a new and innovative menu based on the best seasonal produce and within three months earned an amazing review, the equivalent of Two Chefs Hats. * Returning to the helm at Tetsuya’s in 2005 Benn continued as the guiding force in the kitchen – helping to ensure restaurant cemented its position as the Australian high altar of dining, recognised throughout the world for its unique degustation menu of French and modern Australian cookery with Japanese accents. * In 2007 Benn was approached by an international restaurant group to head up its Asian operations and he moved to Hong Kong. Benn returned to Sydney when the opportunity to open his dream restaurant with George Costi became a reality.
