Stillwater is one of Tasmania's most talked about and most highly awarded restaurants, set in a beautifuly restored 1830's flour mill beside the picturesque Tamar River in Launceston. On a beautiful sunny day sit outside in Stillwater's paved courtyard overlooking the river or cosy up inside amidst the beautifully restored 1830's flour mill with warm timbers abounding.

During the day Stillwater offers casual cafe style food and service from breakfast and lunch through to afternoon tea. The menu is light and fresh and the daily specials are seasonally focused. At night the menu gets very exciting with our contemporary Tasmanian cuisine featuring an abundance of local game and seafood treasures. Also on offer is our wine bar with views over the water offering a full bar and an extensive wine cellar. Perfect for a wine after work or a nibble after the theater or cinema!

Our food is fresh, grown locally by passionate producers who rely on the attributes of our natural environment. Our State regulations keep the modification out of our genetics, the artificial out of our horomones and the free in our ranging animals. We know that grass fed, antibiotic free, natural happy animals make better meat...even if they aren't 'super sized'. Our water is clean sourced from Cape Grim on Tasmania's North West Coast, home of the cleanest air on the planet. Our wines flow from around the State but being located in the Tamar Valley means Stillwater is a cornerstone for the local vignerons hosting a list that showcases our local tipples.

The waiter spilled the wine when pouring, and had no answer when we asked why there were no local cheeses, only cheeses from Victoria and France. As interstate visitors we fully expected there to be some wonderful local cheeses, as we had had at Peppermint Bay south of Hobart. But there were none. This was especially puzzling given the.."

Chef	Craig Will - Local Launceston lad Craig has spent the last 8 years following his formal training gaining culinary experience in operations on the mainland and more recently as 2nd chef at a respected Hobart restaurant before being lured back home to take up the helm at Black Cow before being invited to take on ownership at Stillwater.
