Char koay teow is a Malaysian creation that uses flat rice noodles, fishcake, eggs and fatty Chinese sausage to produce a historically calorically intense dish. Modern Australian variants are many and usually eschew the energy dense ingredients for a leaner result. Modern Malaysian cuisine is a combination of regional techniques paired with Indian and Chinese influences, but char koay teow is more inspired by the latter.
