Chilli gobi uses cauliflower that's breaded and fried as the focal point of the dish. Cauliflower is broken into florets and marinated in a mix of spices: garlic, ginger, green chilli, red chilli flakes, black pepper, tomato sauce and soy sauce give a savoury chilli bite. It's brought to a simmer and drained before being dipped in batter and fried to a golden brown.
