Kadhai beef is a modern take on an old South Asian recipe. The dish is named after the kadhai (deep thick-walled pot) in which it's cooked, and beef replaces the mutton that was used in the earliest versions. The beef in kadhai beef is marinated just as the original mutton pieces were, but in early versions that marination combined with long cook times was required to tenderise the meat. As a happy coincidence, marinating meat provides a chance to add flavour to meat while adding more ingredients to the sauce so it's still performed today.

Kadhai beef may be found in the Nepalese, Indian and Pakistani restaurants of Australia for takeaway or when dining in. When eaten in-restaurant, the dish is often served in the same small metal pot in which cooking is completed. This pot quickly roasts spices in hot oil or ghee, cooks the beef and completes the entire dish once the vegetables are added and the sauce becomes thick.
These vegetables may vary, but usually tomatoes, garlic, onions and ginger are requisites.
