Peking Duck delivery from local restaurants

There are few dishes with a greater sense of ceremony than Peking duck. Originating in Beijing, the ducks cooked in this Chinese favourite are bred specially for the purpose. The history of the dish – it dates back to the Ming Dynasty, about 600 years ago – is almost as rich as its flavour, which blends the sweetness of tender meat with the salty crunch of roasted skin.

An important step that sets the cooking process of Peking duck apart is pumping air beneath the skin to separate it from the fat. The duck is then soaked in water before being hung up to dry in the open air. During this process, the duck is glazed with maltose syrup before being left to stand for 24 hours and finally roasted until crispy and succulent.

There is a great sense of ceremony in the serving of Peking duck, which traditionally occurs in three stages. The duck is brought out in front of consumers and carved at the table before it is removed to be prepared for eating. The first course is the most famous, and has since become an entire meal in its own right: the crispy duck skin is served in steamed spring pancakes with spring onions, sweet bean sauce and cucumber sticks. The sauce is spread across the pancake first before being topped with the other fillings and eaten by hand. The texture and flavour profile of the dish has become so popular that it has spawned a number of variations with ingredients from a number of Asian cuisines.

For the second course the meat of the duck is cut up and served with vegetables. In Australia this often takes the form of san choy bow, a dish of minced meat, vegetables such as carrot, lettuce and onions, vermicelli noodles and herbs. These ingredients are mixed together and served in a iceberg lettuce leaves, which serve as an edible bowl and create a texture and temperature contrast to the filling.

The final traditional Peking duck course is a broth made from the leftover bones. This is a simple dish of soup and celery cabbage that in Australia is often skipped in favour of the preceding two courses. It has spawned a number of variations and can also be enjoyed as a full meal in its own right, made heartier by the addition of more vegetables, pieces of meat, noodles or dumplings.
