Harvest took place during the cool of the night to preserve delicate fruit flavours and aromas. The Shiraz fruit was crushed, destemmed and cold soaked for several hours prior to pressing and clarification. The clarified juice was inoculated with a pure yeast culture and fermented in stainless steel vats at cool temperatures, to maintain the delicate natural aromas and flavours.

Nugan Estate source the grapes for the Frasca’s Lane Chardonnay from Victoria’s cool climate wine region King Valley. As soon as the winemaking team pick the grapes, they gently press them. The fruit for this wine will go through harvest during March. The grapes will then endure a long, cool fermentation in stainless steel vats & French oak barrels. The wine is left to mature in French oak for 12 months, where the team will batonage monthly. And they do this to add complexity, and enhance fruit and oak integration, prior to final blending and bottling.
This wine is more fuller, richer and rounded than the standard Elephant Chardonnay. It has more oak influence, buttery characters and more complexity. Though fresh, it is heavier on the palate due to the oak and buttery influences. Softer in acidity.

After picking, the grapes were whole bunch pressed and underwent slow, cool fermentation in stainless steel vats to preserve the delicate fruit flavours that are famous from this cool climate region. Once dry, the wine was allowed to mature prior to final blending and bottling.

The Cookoothama Sauvignon Blanc Semillon is made using two parts. The Sauvignon Blanc grapes come from Margaret River in WA, where as the Semillon from the Riverina in regional New South Wales.
Harvested in the early hours of the morning, the parcels were destemmed and chilled to 5°C to maintain vibrancy and freshness. After overnight skin contact, the fruit was top loaded into a membrane press, ahead of inoculation with specific yeast strains that promote volatile thiols and polysaccharide production. Fermentation of the Sauvignon Blanc was undertaken at low temperatures, in stainless steel vats to maximize aromatic retention, whilst the Semillon was fermented in seasoned oak barrels to enhance mouth feel and texture. The parcels aged sur lie for a further 4 months, before racking, blending and bottling....
This is the third release of the Skin Contact White Field Blend, sourced again from the Acacia Park vineyard. We co-fermented three varietals, comprising 60% Pinot Blanc, 30% Savagnin and 10% Pinot Gris. Pleasingly, they all reach ripeness at a similar time and so work well together as a true field blend; picked on the same day and fermented as one. Pinot Blanc brings clean aromatics, Savagnin delivers acidity and mid-palate weight, while Pinot Gris contributes overt aromatics and a slightly pink hue to the wine.

Fruit carefully selected. Once this step is complete, they then crush, chill and bag press the select parcels. The winemaking team from Nugan Estate do this to help preserve delicate fruit flavours and aromas of the juice. Afterwards, we clarify the juice before it goes through a slow, cool fermentation. We do this to ensure there is a combination of the residual sugars and to ensure a perfect balance of the acidity. They then leave the wine to stabilise, while we store it at cool temperatures in order to retain natural spritz prior to bottling.

This is the carefree, smashable (highly drinkable) style of Pinot that the family winemakers and many others in the Adelaide Hills like to drink. Super aromatic with pretty red fruits and a nice line of acidity. The fruit was grown in the family vineyard, hand-picked and fermented with a heap of whole bunch. Pressed to oak after one week on skins then bottled three months later. Bottled unfined and unfiltered.

Nugan Estate sources the grapes for this Dried Grape Shiraz from premium vineyards in the Riverina and McLaren Vale in South Australia. Once the winemaking team harvests the grapes, we dry a select parcel of the Shiraz to create flavour intensity, as well as concentration. After fermentation, the wine will remain on its skins for a further five days further. They do this to improve its richness before maturation in American and French oak for 12 months. This wine is dense garnet with a crimson hue. It also has attractive aromas of cherry and plum with dark chocolate, earth, and herbaceous notes. Bruce Tyrrell planted the first vines in the Heathcote region in 1994. The Victorian vineyard is situated on highly prized, deep-red Cambrian soil on the eastern slope of the Mount Carmel range, about 25 – 30km north of the town of Heathcote. The Bare Touch wines are made by Cowpunk winemaker Aaron Mercer using early-picked grapes, free-run juice, and a “hands off” non-intervention approach. The grapes are naturally lower in alcohol and with far less skin contact than traditional red wine, the free-run juice is bright and vibrant with significantly lower tannins. The hands-off wine-making approach allows the fruit to express itself fully whilst building complexity. The result is a range of fresh and elegant wines with a sleek, supple mouthfeel that is perfect to be served with a moderate chill or straight from the fridge.

To retain the delicate natural aromas and flavours, the Pinot Noir grapes were crushed and cold macerated for several days, then yeasted and pumped over in a traditional style to avoid the extraction of bitter tannins. Selected from our organically certified pinot noir and gamay blocks from Balmoral at 900m, these grapes were hand picked on the 11th March 2021 from 6.30am. Placed into half tonne slotted bins, taken directly to the winery. These whole bunches were placed into open fermenters and wild fermentation started while the grapes were fully intact. After 15 days the carbonic maceration was finished and the fruit was gently pressed into stainless steel tanks with lees stirred for 4 months to increase the mouthfeel. The wine was passed through a rock filter prior to bottling. ...

The character of Mendoza wines is forged in high-altitude desert vineyards irrigated by mineral-rich snowmelt from glaciers and snowfields.
