A culinary crucible of African, French, Indian, and Chinese cuisines, Mauritian food is as delicious as it is interesting. Heavily influenced by French dishes and practices, stretching back from colonisation of the island, Indian food is also highly prevalent in Mauritian cuisine. The Indian influence can be traced back to the abolition of slavery, when many labourers migrated to the island and brought the tastes and flavours of their respective cultures and regions. The influx of Chinese migrants in the 19th century introduced the local food scene to quintessential Asian dishes, like rice, noodles and spring rolls. However, all these cuisines became infused with local ingredients and cooking methods, making them uniquely Mauritian in texture and flavour.
