Peruvian cuisine is one of the ultimate and vibrant ‘fusion’ cuisine. It is an exciting mix of indigenous Inca cuisine with dishes also brought in with immigrants from Spain, Italy, Germany, China, Japan and West Africa. The four staples of Peruvian cuisine are corn, potatoes and other tubers, amaranthaceae (quinoa, kiwicha) and legumes (beans and lupins).
The national dish is Ceviche, a delicious combination of raw fish cured in citrus juices, such as lemon or lime. There is also a multitude of regional cuisines, using the local produce from the Amazon, the Andes and the coast. Peru’s varied terrain from mountain ranges to coastal plains has graced the cuisine with a diverse natural pantry!
