Thai chefs continue to bring a wide variety of traditional foods to Australian Thai restaurants, offering native recipes with fiery chillies, as well as fusion-based dishes that blends Thai with Australian and European cuisine. As with most Asian cuisines, rice is the staple of Thai food, with strong aromatic components and spiciness strongly emphasised.

Thai Noodles
Thai Noodles are as delicious as they look. Pad Thai is a stir-fried, medium-size, rice noodle feast with a fusion of fish sauce, sugar, lime juice, ground peanuts, egg, bean sprouts and Chinese chives – it can be combined with pork, chicken, seafood or tofu. This ubiquitous dish is frequently seen as a street food (and whizzing through the streets on a Menulog delivery bike…). Boat Noodles with a rich broth traditionally intensified by (look away now vegetarians...) a splash of cow’s blood are some of the most flavoursome of all Thai noodle soup-style dishes. It contains both pork and beef, as well as dark soy sauce, pickled bean curd, spices and is often served with meatballs and (look away again) pig’s liver.
Thai Green Curry
Thai cooking focuses on lightly prepared dishes with strong aromatic ingredients and a spicy edge. Thai Green Curry is coconut curry flavoured with fresh green chili peppers and Thai basil with chicken, prawns or fish balls. Want spicier? You want Thai Red Curry with Roast Duck, the quintessential mix of the Thai (red curry) and Chinese (red roast duck) cuisines, and often cooked with fruits like grapes and pineapple. Thai Yellow Curry is a Thai-Muslim dish made with chicken and potatoes, though other meats or prawns are often used. Massaman Curry is a thick, almost-Indian-style curry containing coconut milk with stewed beef or chicken and rare dried spices. Jungle Curry hails from forested areas of Northern Thailand (and contains no coconut milk, as they didn’t occur naturally there). Once cooked with wild boar, it is still anything but boring with chicken or pork.
