Pho delivery from local restaurants

When it comes to pick-me-ups, it’s hard to go past a pho (it’s pronounced like “fur). The simple Vietnamese soup is hearty, healthy and above all tasty, with generous servings of broth, noodles, meat and vegetables.  Relatively new to the Australian takeaway scene, pho has quickly developed a name as a cheap, easy and incredibly delicious option for a lazy weekend night.

While Vietnam’s food history stretches back for millennia, pho is only a fairly recent innovation. It was developed in northern Vietnam in the early 20th century, where it was sold at dusk and dawn by street vendors who carried mobile kitchens on their shoulders. The pho ingredients were stored in one container while a cauldron and cooking fire were kept in another, allowing a fresh dish to be quickly whipped up for hungry customers.

The broth is everything when it comes to pho.  Made primarily from beef, the broth is the result of simmering bones, oxtails, steak, onion, ginger and spices for several hours. The liquid takes on the flavour of the beef and the herbs to become savoury and aromatic. Chicken bones can also be used, but are less common.

To bulk up the dish, a generous amount of slippery rice noodles are added. On top of this comes the meat from the broth, usually beef but sometimes chicken. Traditional pho may include a much broader variety of meat than Western palettes may be used to: meatballs, tripe, organs and tendons are commonly used in southern Vietnam.

One of the hallmarks of pho is that it comes with fresh vegetables and seasonings which the customer may add themselves. Fresh beansprouts are usually provided for coolness and crunch while Thai basil leaves can be torn and sprinkled over the top. Lime juice, hoisin sauce and hot chilli sauce are also popular additions.

There is a huge variety in the types of pho available in Vietnam, and these are now become more broadly available in Australia. Filling but light, pho makes a fantastic takeaway dish for any season: refreshing in summer and warming in winter.
