The margherita pizza is beloved for its colour, simplicity and boldness of flavour. True to traditional Italian pizza, it uses only a few key ingredients, carefully chosen to complement one another without overwhelming. It's hard to go past a margherita for a true taste of Italy: tasty and communal, it's the epitome of classic pizza.

The story goes that margherita pizza was invented in 1889 to honour Queen Margherita of Savoy, who was visiting Naples. Chef Raffaele Esposito supposedly selected the ingredients to reflect the colours of the Italian flag: green basil, white mozzarella and red tomato. The result was an elegant and delicious dish that quickly grew in popularity and has since been granted special traditional status by the European Union.

Because the ingredients are so simple, it's essential that they're of excellent quality. Traditionally the thin base should be hand-crafted – without the use of rolling pins or machinery – and briefly cooked in a hot wood-brick oven to impart a crispiness and smoky flavour.

While tomato sauce is frequently used as a base, the original margherita used chopped tomatoes, which are scattered across the pizza crust in a spiralling motion. Salt is added to flavour the tomatoes, which liquefy and form a sweet, tart and fragrant sauce throughout the cooking process.

Fresh, mild buffalo mozzarella is then laid on top of the tomatoes followed by a layer of torn basil. The basil and tomato provide a sharp contrast to the subtle creaminess of the mozzarella. And of course, no Italian dish would be complete without a finishing sprinkle of good olive oil to add flavour, depth and a good burnish.

It's easy to see why the margherita has become beloved not just throughout Italy but across the whole world. In Australia the margherita dominates the world of pizza. Tasty but simple, it's a dish easily shared by the whole family, and makes a cheap, easy and crowd-pleasing takeaway meal.
