Like its big brother, pad Thai, pad see ew is strongly influenced by Chinese tradition. It’s common throughout both Thailand and Laos and, as a result, has developed a strong following in Australia, where its bold flavours and colours and deliciously contrasting textures have made it a family takeaway favourite.

Pad see ew translates to “fried with soy sauce” and that provides an excellent summary of this Thai dish. Dried rice noodles are soaked in warm water until tender and slippery before being stir fried with a combination of dark soy sauce and light soy sauce, which impart a characteristically dark and salty (but not overwhelming) flavour.

Stir fried egg and leafy Chinese broccoli help to absorb the flavours of the sauce, the egg acting like a soft, scrambled sponge while the broccoli drinks in the soy. The broccoli is best cooked until just beginning to wilt, retaining its colour and texture. The crunch of the vegetable acts as a foil of the softness of the rest of the ingredients.

Meat is generally included in pad see ew, with the most common in Australia being chicken, mild enough to take on the sauce without introducing any new overpowering flavour. Beef and pork may be used instead, as might a variety of seafood including fish and prawns. It’s becoming increasingly common for tofu to be used as well.

Pad see ew bears a lot of similarities to the dish known as char kway teow in Singapore and Malaysia, another firm takeaway favourite. Char kway teow also makes use of rice noodles stir fried in soy sauce but tends to contain more chilies and a greater variety of ingredients, such as cockles, fishcake, pork fat and Chinese sausage.

Though not as popular as pad Thai, pad see ew is beloved as a takeaway dish throughout Australia. Its flavours are less challenging and more hearty than pad Thai, and its light enough to be a refreshing summer dish and filling enough to be a winter warmer. Next time you’re automatically reaching for the pad Thai, spare a thought for pad see ew, its equally delicious takeaway sibling.
